Lets take advantage of all that beautiful fresh produce thats rearing its heads at the Markets.
I love how the warmer weather also brings with it the beautiful fodder for salads, so this week we have a recipe that is completely packed with colour, flavour and goodness....all boxes ticked!...lets get stuck into it.
SPRING SALAD WITH GOATS' CURD
How to......
Arrange 2 bunches of peeled and blanched asparagus, 1 bunch peeled baby carrots, 1 cup podded fresh peas, 5 radishes (quartered) and 150g each of orange bliss and grape tomatoes on a platter.
Drizzle with 1 - 2 tbsp extra virgin oilive oil and juice of half a lemon.
Season and scatter with 1 cup chervil leaves.
Serve 300g goats' curd on the side.
This recipe serves up to 10 people or in our family, it's enough for 5 - 7 because we love, love our salads and will have this is a meal.

BREAK OUT THE DRUMROLL...ITS FRIDAY...COCKTAIL FRIDAY!
Thank you to nature and all of its wonders...especially in providing us with the most divine strawberries this season. And thanks also to Jennings Cox..Mining Engineer extraordinaire and also the inventor of the Daiquiri. You Sir, go to the top of the class with a Gold Star.....
I love the Pina'ta variety that are currently available at the Spring Markets....coming from an organic market gardening background, I find them to be the most true to flavour and perhaps its my imagination but they seem to 'keep' longer.....long enough for Friday and the making of....
STRAWBERRY DAIQUIRIS!
What you need....
3/4 cup pureed frozen strawberries
1 cup light rum
4 teaspoons sugar
Juice of 4 limes....mmmmmm.....lime....
Ice Cubes as needed
4 fresh strawberries with hull intact (hull is the green leafy bit at the top) for garnish.
4 pretty cocktail glasses
What to do....
Here's the hard bit....put all ingredients in a blender with a handful of ice and blend, blend, blend!
Then pour into your pretty glasses and garnish with a strawberry each.
Fortunately these are so easy to make that you will be able to navigate the blender to create at least two or three of these in one sitting....drink responsibly though folks!
